Chocolate and Spice Cupcakes Cake with Cream Cheese Icing

This is the most delicious and luxurious chocolate cake that I have ever made! With the spicy hint at the end combined with the luxurious cream cheese icing - this is bound to be a party favourite!
I must note that this cake is inspired from, "The Stay at Home Chef"! I love their website - full of fun and creative recipes!
So how did I come across making a chocolate and spice cake? Well I attended a bridal shower in 2019 (obvi not 2020), and they ordered a Dufflet's cake (which is this bomb bakery located in Toronto) and IT. WAS. AMAZING! I had been craving something like it so I decided - let's get creative during quarantine! See below for this yummy recipe! This recipe can make between 50 - 60 regular sized cupcakes and close to 120-130 mini cupcakes!

INGREDIENTS
Cake Batter
3 cups all-purpose flour
3 cups granulated sugar
1 1/2 cups unsweetened cocoa powder
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
4 large eggs
1 1/2 cup of milk
1 cup of warm water
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 tablespoon of ground all spice
1 tablespoon of ground cinnamon
1 tablespoon of ground nutmeg
Cream Cheese Icing
1 1/3 cup cream cheese softened
1 cup butter
4 cups powdered sugar
2 teaspoons vanilla extract
INSTRUCTIONS
Cupcakes
Preheat oven to 350 degrees Fahrenheit.
Prepare cupcake trays with cupcake sleeves.
Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
Add eggs one at a time, beat on medium. Then incorporate milk and oil and beat on medium-high for a minute.
Lastly add vanilla extract and warm water on low for 30 seconds and then beat on high for another minute.
Scoop the batter with an ice cream scooper into cupcake trays.
Bake for 20 - 25 minutes in a 350 degree oven until a toothpick inserted into the center comes out clean.
Take the cupcakes out and let them cool for about 10 minutes.
Frost the cupcake with your favourite tips!
Pro-tip: Take the cupcakes out of the tray immediately, because if you leave them in the tray they continue to cook and may get burnt or overcooked.
INSTRUCTIONS
Cream Cheese Icing
In a large bowl, beat together butter and cream cheese until fluffy. This process may take up to 5 minutes and for best results use a stand mixer.
Beat in powdered sugar, 1 cup at a time. Lastly add in vanilla extract to add taste and beat for about 2-3 minutes for best results.
